Blue Cheese Dressing
Blue Cheese Dressing is the perfect creamy salad topping, whether it’s on a wedge of iceberg lettuce dressed with bacon and chives, on a chopped salad with all the fixings, or with a platter of vegetables and fruit as an appetizer. This salad dressing recipe was adapted from a more mild version that was an old Mr. Steak restaurant standard bumped up with a recipe passed along by friends that included much more garlic and vinegar. In my opinion, its robust flavors are a perfect blend of spicy, funky, and creamy goodness. If you don’t care for blue cheese, you can leave it out and the base is still a delicious creamy garlic dressing.

A kicked up combination of a Blue Cheese Dressing recipe from friends and the old Mr. Steak recipe, good enough to eat with a spoon!

- ¾ cup Sour Cream
- ½ cup Mayonnaise
- ½- ¾ cup Buttermilk adjust for desired thickness
- 3-4 cloves Garlic
- 2 T Red Wine Vinegar
- 2 T fresh chopped Parsley
- 1 t Salt
- 1 t fresh ground Pepper
- 6 oz Blue Cheese

- Mix all ingredients except Blue Cheese in a bowl with a whisk or in a food processer. Once blended, crumble a 6-ounce wedge of blue cheese into the mixture and stir to combine. Serve immediately or refrigerate in an air tight container for up to one week.
