Golden Crumb Broccoli Bake
Golden Crumb Broccoli Bake is another easy and delicious side from Mike’s family. My mother-in-law has passed along a number of casserole recipes to us over the years and this is another winner. It’s a fun change to our regular rotation of roasted or steamed broccoli. It’s a great casserole with minimal ingredients and minimal effort required.
A while back a friend asked if I had a recipe for broccoli that hides the taste of broccoli. I’m not sure that this totally transforms this delicious cruciferous veggie, but their family liked it. Golden Crumb Broccoli Bake is even a pleaser for people who don’t think they like broccoli. Cheesy, creamy, crunchy, and so delicious.
I try to try to minimize the number of packaged food items I use in recipes. But there’s something about cream of mushroom soup that adds just the right consistency to a hot dish. I know it can be duplicated, but for a weeknight dinner, take the shortcut and kick back with a glass of wine while the magic happens in the oven.
Golden Crumb Broccoli Bake
Equipment
- 9×13 baking dish
Ingredients
- 1½ lb Broccoli florets
- 1 can Cream of Mushroom soup undiluted
- ¼ cup Mayonnaise
- ¾ cup Cheddar Cheese shredded
- ½ cup Red Bell Pepper optional
- 1½ tsp Lemon Juice
- ½ cup Cheese Crackers crushed
Instructions
- Preheat oven to 400 degrees with rack in the middle position.
- Wash and cut broccoli florets from head. Add to baking dish in an even layer.
- Mix together in a medium bowl soup, mayonnaise, ¼ cup of cheese, bell pepper, and lemon juice. Pour over broccoli. It will be thick.
- Top with the remaining ½ cup of cheese and crushed crackers. Bake uncovered for 30 minutes.
