Chocolate Peanut Butter Balls

Chocolate Peanut Butter Balls are super easy, decadent, and make a great gift. They're great for making for holiday gatherings, family events, or goody boxes to let your friends know they're loved. It's a bit of a process, so have fun making these alongside someone or as a group activity.

Equipment

  • Double boiler
  • 2 parchment lined sheet pans

Ingredients
  

Peanut Butter Balls

  • 1 lb Powdered sugar
  • cups Peanut Butter
  • 3 cups Rice Krispies
  • ¼-½ cup Unsalted Butter, softened as needed to form balls

Chocolate Coating

  • ½ lb Hershey Bar
  • 12 oz Chocolate Chips

Instructions
 

  • Cream the powdered sugar and peanut butter, add Rice Krispies and test to see if balls will form and stay together. Add softened butter to the dough until balls will form. You can also add more peanut butter instead of butter if you prefer. Form dough into balls. Place on parchment paper lined sheet pans that will fit in your fridge or freezer.
  • Chill for 30 minutes.
  • Melt the chocolate in a double boiler or a bowl set over a saucepan of simmering water.
  • Dip balls in melted chocolate and place back onto the parchment lined sheet pans.
  • Chill balls until the chocolate sets. Store in an airtight container or zip top bags. Peanut Butter Balls may be frozen or kept in the refrigerator.

Notes

If you run out of chocolate before you run out of peanut butter balls, melt additional chocolate chips and chocolate bar little by little. I'm a heavy dipper and generally have to double the chocolate for coating.... It may not be necessary, but it's definitely not wrong.
