Baby Bok Choy Salad is a power punch of flavor with cool, fresh crunch that compliments many other dishes. I’ve been making this super easy Baby Bok Choy Salad for years. I originally adapted this version from a recipe we received with our produce subscription box. I’ve changed the dressing to suit our preferences and it’s been a hit with everyone who’s tried it. The dressing breaks down the greens a bit so don’t be daunted by the quantity of bok choy listed. Serve this simple salad as a side, over rice, or add a little leftover chicken or steak and it’s a full meal. This salad is a crowd pleaser, a snap to throw together, and easy to boot.

When the garden is in full swing, we find ourselves overrun with greens all at once. If you’re anything like us, there’s more in the garden than we need and I seem to forget to stagger my plantings. So, we have to figure out fun ways to use what we have available. This is a perfect way to devour some baby bok choy. It’s also great in stir fry or added to a standard green salad.

In addition to being tasty, baby bok choy is loaded with vitamins, minerals, and has a reputation for anti inflammatory properties as well. It’s no secret that I love food but, I especially love yummy food that’s also packed with nutritional benefits. So, when you’re planning your garden, make room for some bok choy and enjoy this salad.

Ingredients
  

Dressing

  • 1 tbsp Olive Oil
  • cup Rice Wine Vinegar
  • 1 tbsp Honey
  • ¼ cup Soy Sauce
  • 1 tsp Hoisin
  • ½ tsp Dijon Mustard
  • 1 tsp Sesame Oil
  • ¼ tsp Red Pepper Flake

Salad

  • 4 bunches baby bok choy cleaned and sliced
  • 4 green onions sliced
  • 1/8 cup slivered Almonds toasted
  • 1/8 cup Cashews chopped
  • 1/3 cup crunchy Chow Mein noodles for serving

Instructions
 

  • In a small bowl mix together all dressing ingredients, set aside.
  • Wash and slice Bok Choy and green onions, place in a large bowl.

  • Chop nuts, combine all the salad ingredients except crunchy Chow Mein noodles and toss with dressing.

  • Top with crunchy noodles for service.

Notes

Top with some leftover chicken or steak for a main dish.
