Fennel Apple Mandarin Slaw
Fennel Apple Mandarin Slaw perks up your table with a crisp, fresh, and flavorful dish that’s great on a hot summer evening. If you’re not familiar with fennel, it’s a crunchy, anise flavored veggie. I came upon this super easy Fennel Apple Mandarin Slaw recipe in a produce subscription box years ago and it took a while for me to give it a try. Why did I wait? Who knows! It lightens up a dinner plate so nicely and it holds surprisingly well, in case there’s a little leftover. For a full entrée, serve over some greens, top with leftover chicken, and add a little sesame dressing!
Fennel Apple Mandarin Slaw
Ingredients
- 1 fennel bulb trimmed and thinly sliced
- 1 apple cut into matchsticks
- 10 oz fresh mandarin orange segments reserve 1 T juice (or 1 can of mandarins, drained with 1 tbsp orange juice)
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- Salt and fresh ground black pepper to taste
Instructions
- Combine the fennel, apple, and mandarin oranges with orange juice in a bowl. Add the olive oil and vinegar. Season with salt and pepper. Toss to combine.
- Allow to sit 10-15 minutes before serving
