Red Jello Salad is a treat every time it hits the table. Throughout childhood, Jello Salad was a mainstay. Green Jello with pears served on a lettuce leaf, Jello with bananas, or cottage cheese were all considered salad. Red Jello Salad is a bit closer to the mark as a true salad since it has fruit, vegetable, and nuts. However you choose to view the term “salad” this is one of my favorite side dishes for a large dinner party.

While it may be a throwback, I think it’s underappreciated. Since it calls for canned fruit it is difficult to cut the recipe in half so this does make a large volume. For that reason we tend to only make it for special occasions which makes it a great treat. It takes some time to set up which makes it an easy dish to make the day before your event to reduce the prep time the day of a party.

Ingredients
  

Ingredients:

  • 3 sm pkg red Jello raspberry, cherry, or strawberry
  • 1 can whole cranberry sauce
  • 1 sm can crushed pineapple
  • 1 cup diced celery
  • 1 ½ cups chopped apple
  • ½ cup chopped pecans

Instructions
 

Directions:

  • Drain pineapple, reserve juice and add enough water to measure 2 cups, pour into saucepan and bring to a boil. Pour over gelatin mixes in a large bowl; stir 2 minutes until completely dissolved.
  • Stir in 2 cups ice cubes, pineapple and cranberry sauce. Chill for aprox 2 hours or until mostly firm. Stir in remaining ingredients and refrigerate for another 2 hours or until completely firm.
