Cheesy Beefy Macaroni
Cheesy Beefy Macaroni or Cheeseburger Macaroni or Mac and Cheesy Beefy Casserole, whatever you call it, it’s easy and delicious. This is not the most health conscious dish but it will leave you happy and full in very little time.
I love a hot dish on a cold night. Comfort food, casseroles, cheesy baked goodness, are underrated. We have a few family favorites that are such a treat and super easy to make. Plus, there’s usually enough for another meal. This recipe is from Mike’s family, a from-scratch-ish hamburger helper type of dish. Not low fat, not a picture of healthy eating, but it’ll put a smile on your face and warm up your belly. You can easily personalize, adding veggies or making ingredients from scratch, use what you have on hand. I wouldn’t skip the Mac & Cheese, other than that, you can replace any number of ingredients and have a great hot dish. We rarely make it the same way twice, but with this base it’s hard to go wrong.
We use our enamel coated cast iron braiser pan that goes from stove top to oven to table and saves on clean up. You can use a 9×13 casserole if you prefer. This casserole recipe is practically bullet proof, tailor it to your liking and enjoy!
Cheesy Beefy Macaroni

- 1 pkg. Kraft Macaroni & Cheese
- 1/4 cup Butter for Mac & Cheese
- 1/4 cup Milk for Mac & Cheese
- 1 lb. Ground Beef
- 1 medium onion chopped
- 1 can Cream of Mushroom soup
- 1/2 of the soup can of milk
- 1 4 oz can Green Chilies optional
- 1/2 cup chopped mushrooms optional
- 1 tsp salt to taste
- 2 tsp ground black pepper to taste
- 2 tsp garlic powder
- 1/4 tsp red chili flakes optional
- 2-3 cups grated Cheddar Cheese

- Preheat oven to 375 degrees and adjust rack to the middle of your oven.
- Prepare Macaroni & Cheese according to directions on the box, add the soup and additional milk, stir to combine.
- In a large skillet, brown meat over medium heat. Drain fat and add onions, cook until onions are soft. Add green chilies, fresh mushrooms, salt, pepper, garlic powder, chili flakes, and stir until combined.
- Add meat mixture to Macaroni & Cheese. Stir to combine and pour into a greased casserole dish. If using an oven safe skillet or enamel coated cast iron pan, add Macaroni & Cheese to the meat mixture then stir to combine.
- Sprinkle with grated cheese (amount to your liking, I like a lot of cheese).
- Bake 20-30 minutes at 375 degrees until bubbly and browned. Let cool for 5-10 minutes before serving.
