I was salivating from the start seeing Shrimp, thawing and awaiting our Sunday dinner. I figured Mike had a plan for some delectable spicy grilled meal, but there wasn’t evidence of spice rubs or marinades. He had something else in mind entirely, the cookbooks and laptop were ablaze. There were inquiries about ingredients on hand and not his usual bag of tricks. The result was delicious.
I enjoy watching people get creative and stretch their interests. Mike is a great cook, usually he specializes in grilling but he’s no slouch in the kitchen. He was really in a zone with this one. He found a couple of recipes that piqued his interest and started in on a creamy garlic alfredo-type sauce for the shrimp. Of course we bumped up the garlic and will likely double it next time but this version was delightful alongside some steamed broccoli with a dusting of parmesan cheese.
Creamy Garlic Shrimp Alfredo Pasta

- 1 pound large shrimp peeled, deveined and tails removed
- 1 tbsp olive oil
- Salt and pepper
- 16 oz fettuccini noodles
- ½ cup butter
- 1 pint heavy cream
- 4 oz cream cheese
- 7 cloves garlic minced
- 2 tbsp garlic powder
- 1 tsp Italian seasoning
- ¼ tsp salt
- ¼ tsp pepper
- 1 cup grated parmesan cheese
- ¼ cup chopped parsley

- In a medium skillet over medium high heat, add shrimp and olive oil. Cook the shrimp 1-2 minutes per side until they are opaque. Remove from pan and set aside.
- In a large pot bring salted water to a boil, add the fettuccini and cook until al dente. Drain
- Meanwhile, prepare sauce. Add butter to the skillet over medium heat, add minced garlic, garlic powder, and Italian seasoning, cook for 30-45 seconds until the garlic is fragrant. Add cream and cream cheese, cook over medium heat and whisk until melted. Add the grated parmesan cheese and let simmer until it starts to thicken. Add the pasta and shrimp, toss to coat.
- Sprinkle with parsley for service
