Carrot and Raisin Salad
Carrot and Raisin Salad may be old fashioned, but it never goes out of style. A creamy, slightly sweet dressing over crisp carrots and apples with plump raisins, it’s a delicious side dish. This is a family favorite that both my grandma and my mom have made for as long as I can remember. My mom adapted it for use at the restaurant where she worked and it was a salad bar favorite. This recipe is super easy to throw together and it can be made ahead of time. I recommend soaking the raisins to plump them up a bit.

Carrot and Raisin Salad
Ingredients
- 4 Carrots, peeled and shredded
- 2 Apples, peeled, cored and shredded
- ½ cup Raisins
- ½ cup hot water for soaking raisins
- ½ cup Best Foods Mayonnaise
- 2 tsp Honey
- 1 tbsp Lemon Juice
Instructions
- Heat water and raisins in a small saucepan over medium low heat.
- Wash and peel carrots and apples, core apples. Shred in a food processor or on a box grater. Drain raisins.
- Mix mayonnaise, honey, and lemon juice in a medium bowl. Add carrots, apples, and raisins and mix thoroughly to distribute dressing.
