For years I did everything I could with ground beef to put good, tasty food on the table for as little money as possible. Homemade hamburger helper type recipes are budget stretchers. But, flavor doesn’t have to be compromised to put a budget meal on the table. Stretch your grocery money a little further and buy a chuck roast or chuck steak and grind it yourself. You’ll get a better tasting ground beef with minimal fat and you know exactly what’s going into your dinner. Or, ask the butcher to grind a piece of beef for you so it’s fresh. When you’re preparing your budget meal, explore the spice rack and add in the flavors you love. This is a great recipe to personalize as you choose. We rarely make it the same way twice.

This recipe is another from Mike’s bachelor days recipe book. We’ve made some improvements and additions but the simple comfort is always appreciated. Ingredients

  • 1 lb ground beef
  • 1 med onion chopped
  • 10-12 mushrooms sliced
  • 2 stalks celery sliced
  • ½ green bell pepper chopped
  • 4 cloves garlic minced
  • 1 4 oz jar pimento
  • 1 4 oz can green chilies
  • 1 can cream of mushroom soup
  • 1 cup milk
  • 1 cup water
  • 1 tbsp Worcestershire sauce
  • 2 tsp salt
  • 1 tsp freshly ground pepper
  • 1 tsp white pepper optional
  • 2 cups uncooked wide egg noodles

Directions

  • Brown ground beef and drain. Add onion and sauté until softened. Add remaining ingredients. Heat to a simmer, cover and cook until noodles are tender, stirring occasionally, about 20 minutes. Add more water if too thick.
