Easy Ramen Salad

Easy Ramen Salad is a quick side dish, great for potlucks, entertaining, or a make ahead dish for camping. It has a light but flavorful dressing that goes with almost any main dish. And, if you want it to be the star, just add some cooked chicken and it’s a full meal. We like to make this before a long weekend of camping or yard work so there’s something ready for snacking.

I was introduced to this salad by my mother-in-law and it’s become a favorite to take to any cookout or gathering. It’s a great choice for warm, sunny days. No dairy to add concern about temperature and whether there will be ice on hand. The noodles need time to sit and absorb the dressing so it’s a great dish to make ahead of time. It’s also simple to cut in half or expand, depending on your needs. If you want to make this the main dish, shred up some leftover chicken or pick up a rotisserie chicken and use a portion of it to each serving.

Easy Ramen Salad with those crunchy, toasted nuts, flavorful noodles, and fresh cabbage is great with bold grilled meats or more subtle flavors of roasted or fried chicken. It goes well with most anything. It’s pictured here with pork tenderloin and pineapple salsa with garlic bread, macaroni salad, and roasted vegetables.

Ingredients
  

Ingredients:

  • ½ cup sliced almonds
  • ¼ cup sesame seeds
  • 8-10 green onions finely sliced
  • 1 med head cabbage finely chopped
  • 2 3oz pkg ramen noodles broken up, uncooked
  • ¼ cup sugar
  • 6 Tbsp. rice vinegar
  • 1 cup oil
  • 1 tsp. pepper
  • 1 tsp. salt optional

Instructions
 

Directions:

  • Slice cabbage and green onions, add to a large bowl with noodles.
  • Toast almonds & sesame seeds in a skillet over medium heat until lightly browned – watch closely.
  • Whisk together sugar, oil, vinegar, salt & pepper; pour over cabbage & noodle mixture and add almonds & sesame seeds. Cover and chill for several hours or overnight for flavors to blend.

Notes

Cooked chicken can be added to make this side dish into a meal!
