Grandma’s Coleslaw

Grandma’s Coleslaw is a creamy and crunchy salad with a great balance of tang and sweet. It’s excellent with meals that are overly rich or heavy for a fresh contrast. My grandma’s recipe is my standard although we’ll occasionally switch up the dressing a bit to compliment the main dish.

We always have cabbage on hand as a staple. When I’m out of time and ideas, coleslaw is an easy side to throw together. Even when the main dish has lots of vegetables, this is a nice addition for a crisp element. I’ve added in other elements from time to time but I keep coming back to the tried and true original. Shredded carrots, thinly sliced red onion, or red bell peppers are attractive additions. But, my favorite is Grandma’s Coleslaw. It’s what I remember from childhood.

I have always used the same serving spoon to put it together because that’s what my grandma did. Until recently, I’ve never measured ingredients, that’s not what grandma did. It may sound crazy, but this is truly a dish that I learned by being in the kitchen with grandma. What I find most amusing about this is that I find it acceptable to use that same spoon for serving and it drives my dad crazy. He seems to think that it’s far too small for serving at the dinner table. So, it’s now a rule.

Ingredients
  

  • ½ cup Best Foods mayonnaise
  • 2 tbsp cider vinegar
  • 2 tbsp sugar
  • ½ tsp ground black pepper
  • ½ head cabbage sliced thinly

Instructions
 

  • In a large bowl, mix together mayonnaise, vinegar, sugar, and pepper.
  • Thinly slice cabbage and add to dressing, mix to evenly coat cabbage. Let sit 10-15 minutes or while the rest of the meal is prepared.
