Mustard Crusted Pork Chops

Mustard Crusted Pork Chops are a fun variation to keep pork chops exciting. With a flavorful crust and moist, tender meat, this is a delicious way to shake up dinner. The mustard is complimentary without being overpowering. The breading isn’t too thick but has a wonderful crunch. I serve the standard mushroom gravy smothered version of pork chops on a regular basis. They’re comfort food, wonderful over rice, add some frozen veggies and dinner’s on the table. But, these add a crunchy factor that’s a welcome change.

These mustard crusted pork chops can easily be spiced up with spicier mustard. I used a whole grain mustard but a horseradish mustard or a mild dijon would both work well. I still like some rice on the side, but the nutty nature of brown rice is a better fit than medium grain white rice.

These pork chops have a distinct German flare. Add a great side of sweet and tangy braised cabbage, mashed potatoes and apple sauce and you have a meal ready for Octoberfest.

We’ve tried this tactic a few times recently with both pork and a slightly different recipe for chicken. I was a little surprised that Mike’s first comment was “oh, shake and bake” because I’ve never eaten, let alone made, shake and bake anything. I have nothing against it, but this was researched, adapted, I hoped it would be tastier than something from a box. It all worked out, it was enjoyed by all and we’re still making the pork and chicken versions.

  • ¼ cup breadcrumbs Italian seasoned breadcrumbs or grind up seasoned croutons
  • 2 tbsp fresh thyme, chopped
  • 1 tsp paprika
  • 1 tsp kosher salt
  • 1 tsp freshly ground pepper
  • 3 tbsp whole-grain mustard
  • 3-4 Pork Chops about 1 ¼ lb
  • 2 tbsp Olive Oil

  • Combine breadcrumbs with thyme in a shallow dish. Dry pork chops with a paper towel and season first side with ½ teaspoon of salt, ½ teaspoon pepper, and ½ teaspoon paprika.
  • Spread half of the mustard on seasoned side of port chops then press, mustard-side down, into breadcrumbs.
  • Gently place pork chops on a dry surface and repeat seasoning and breading steps above on second side.
  • Heat oil in a large skillet over medium heat. Add the pork chops and cook until golden brown, about 5 minutes per side until center of meat reads 145 degrees.
